Baked ocean trout

Ingredients

  • Large potatoes 3 pcs
  • Semi dried tomatoes 8 pcs
  • Sugar 40 gr
  • Butter 50 gr
  • Oregano sprigs, leaves removed 10 gr
  • Puff pastry sheet 500 gr
  • Salt and papper To your taste

Instructions

  1. Pre heat your oven to 200 C on fan assist. Line the bottom of a solid base pan with baking paper.

  2. In a small sauce pan combine butter and sugar oven a low heat then increase the heat while strring. Bring to the boil and thiken, be careful not to burn. Drizzle over the base of the pan then decorate with individual oregano leaves.

  3. Over lap the potato slices around the pan and truck in the semi dried tomatoes.

  4. Pile on the sweated onions and break up the goats cheese and scatter evenly on top.

  5. Cover with thawed puff pastry sheet and trim off the corners allowing enough pastry to tuck into the pan.

  6. Bake for 40 minutes or until brow and puffed. Remove from the oven.

  7. Allow to cool a little then place a dinner plate on top and flip over. The pan should lift off. remove the paper, slice and serve.
